I am wondering if there exists are user guide for PLCOpen Editor somewhere, or if not perhaps some additional examples other than the 'Hello World' example to help with understanding the tool as well as building larger LD projects.

I'm sorry, but I still haven't got the time to write proper documentation about the editor. I want to do it in the future, but it's still pending. However, you can find a very good tutorial about ladder logic here: http://www.plcs.net/contents.shtml

Since the editor is IEC 61131-3 compliant, pretty much anything you learn about ladder logic and the other languages can be applied to it.

Hxeaven, PLCopen Editor is part of Beremiz project. You can look at screencasts for Beremiz on youtube. https://www.youtube.com/user/andrewskvortzov
There are some documentation for Beremiz, that you can read to understand how to work with editor.
But keep in mind because PLCopen Editor is part Beremiz, there are some Beremiz-related information there. OpenPLC project uses plain PLCopen Editor without any extensions.

If you need to know how to write IEC program in PLCopen Editor look at "First steps example" on Beremiz youtube channel. It shows all steps.
There are some other examples, for most of them there are screencasts on youtube.

Interesting insight from the Beremiz videos. I was watching a video that had a traffic light program connected to a visual. My goal is to implement that design with OpenPLC on an Arduino (connected to buttons and lights to mimic) with a Windows host, and connected to SCADA BR with an HMI showing a traffic light system.
