Hi there,
I am very new to both OpenPLC and arduinos but can get the slave device working on OpenPLC for the arduino with the firmware. 
My trouble is then how to incorporate lets say a simple thermistor project into the firmware code?
Any pointers in the right direction would be great.

I can provide the arduino thermistor code if needed. Just not sure how to then add this into the OpenPLC code for arduino.

You shouldn't change anything on the firmware. All the programming happens on OpenPLC Editor, running on your computer. To read a thermistor, for example, just connect it (with the proper wiring, pull up resistor, etc) to one of the analog inputs of your Arduino, and then the measurement will be available on %IW10x (%IW100, %IW101, %IW102, depending on which port you connected the thermistor). Try following the start guide tutorials at https://www.openplcproject.com/reference (under the basic section) to get a better grasp of how OpenPLC works.

Perfect thank you! the thermistor wiring works with the standard C on the arduino so will re upload firmware and test with the Editor.
